Cajun Guacamole

I tried out this recipe, this weekend as a snack for our beer brewing session.   It was a great success!    It’s been awhile since I’ve done Guacamole since it tends to go bad after a day.   Love all of the different spices in it, and it has the right kick..   everyone thought there was jalapenos in there but it’s the hot paprika.

Serves 8, Prep 15 mins


4 avocados
¼ cup lemon juice
1 teaspoon salt
1 green bell pepper, finely chopped
1 ½  cups cherry tomatoes, halved or quartered
1 bunch scallions, thinly sliced
5 large cloves garlic, finely chopped
2 teaspoons chopped fresh thyme
1 teaspoon hot paprika
½ teaspoon  celery salt
½ teaspoon cayenne pepper
tortilla chips for serving


1)      In a serving bowl, mash together the avocados, lemon juice and salt.

2)      Fold in the remaining vegetables and seasonings.

3)      Serve with the tortilla chips.



I had another avocado on hand in case if some of the flesh was browned.   I added a little of it… so it was about 4 ½ avocados.   Adjust to your taste.    The hot paprika made it pretty spicy but not overly.. adjust to your tastes.
